Where Oakland’s food businesses start

Oakland’s food economy runs on small producers: caterers, hot sauce makers, bakers, pop-up chefs and food trucks. Few of them can build a kitchen of their own, so they rent hours in a shared one, often several tenants in a day on the same tables and ranges. Each tenant cleans up after itself, but the building’s floors, drains, cold rooms and support spaces need a dedicated crew. Oakland Cleaning Co is that crew.

Operators get one plan for the whole facility, and tenants arrive to a kitchen that looks freshly opened, shift after shift.

Shared kitchens across the city

Shared kitchens come in several forms. They range from coworking kitchens to hourly rental kitchens and nonprofit incubator kitchens for new chefs.

Food trucks add to the traffic, since mobile units return to their commissary for cleaning and servicing on the days they work. Every one of those visits leaves its mark on the floors and drains.

Prep lines and greasy surfaces

Shared prep tables, shelving, sinks and splash walls are degreased and cleaned each visit, along with the undersides of tables and the frames of equipment stands, where oil and flour hide. Food-contact surfaces are cleaned and sanitized to the operator’s procedures, and range, oven and fryer exteriors and the wall behind the line are wiped down.

Cold rooms, dish stations and drains

In the walk-in cooler and freezer, crews clean floors, gaskets, door handles and wire racks, setting tenant product aside and putting it back in the same order. Dry storage shelves and ingredient bins are swept and wiped so spills never cross from one tenant’s supplies into another’s.

Dish stations are scrubbed from drainboards to splash walls. Kitchen floors of quarry tile or sealed concrete get degreaser worked in by brush and then a rinse, drains are cleared and grates washed, and anti-fatigue mats are lifted, washed and dried. Periodic machine scrubbing is booked through commercial floor care.

Shift changes, restrooms and lockers

Shared kitchens fall behind at the handoff. A short changeover covers the common prep tables, sinks, the floor along the line and the trash and compost stations, so a pastry tenant starting at noon never inherits a breakfast caterer’s mess. Kitchens that block changeover time on their booking calendar get the reset on a fixed routine.

Restrooms, locker areas and break rooms are cleaned and resupplied each visit, and the hand sinks tenants wash at before work stay stocked with soap and paper towels.

Support for inspection readiness

Health inspectors look at the full facility. Clean floors and drains, clear hand sinks, organized storage and walls without grease film make those visits go smoothly.

Before an inspection or a new tenant’s first day, a deep pass can be booked for walls, light fixtures, the tops of walk-ins and behind movable equipment. Exterior grease spots by the back door and dumpster area can go on a pressure washing schedule.

A baseline clean, then the routine

Service starts with a walkthrough during a gap in your booking calendar. The operator shows us each station, the cold rooms, the dish area and the house rules tenants follow at checkout. The first visit is a baseline clean that resets the building: walls behind the ranges degreased, grout lines on the kitchen floor scrubbed, every drain cleared, and equipment stands pulled away from the wall so the floor under them gets scrubbed as well.

After that, the routine is written station by station, and the operator can share it with tenants so each one knows where their own cleanup ends and the crew’s work begins. No more debates over who left flour under the mixer. Hand soap, paper towels and can liners come from your stock or through our janitorial supplies service, restocked on every visit.

Delivery kitchens and pricing

Kitchens that rent private units to delivery-only brands work differently, with packing lines and courier traffic; see ghost kitchen cleaning for that routine.

Pricing follows kitchen size, the number of stations and cold rooms, how many tenant changeovers are included and floor condition. After a walkthrough we send a written quote; start on the contact page.

A few useful answers

Common questions.

How quickly can the kitchen be turned around between tenants?

Each changeover is sized to the gap you block on your booking calendar, so the next tenant starts on time. The reset covers shared prep tables, sinks, the floor along the line and the waste stations.

Do you sanitize food-contact surfaces?

Yes. Prep tables and other food-contact surfaces are cleaned and sanitized to the operator’s procedures on every visit.

Do you handle tenant product in the cooler?

Only to clean under it. Product is set aside, shelves and floor are cleaned, and everything goes back in the same order.

Can you do a deep clean before our county inspection?

Yes. Walls, fixtures, drains, walk-in tops and the spaces behind equipment can be deep cleaned ahead of the visit.

Will tenants know what they clean and what your crew cleans?

Yes. The station-by-station routine can be posted or shared with tenants, so each one knows which tasks are theirs before checkout and which the crew handles.
